Recipe: Toast, Two Ways

Multigrain bread is the starting point for two very different—but equally delicious—ways to enjoy some toasted goodness. Great for breakfast, snack time, or anytime.

Avocado Toast

This avocado toast is anything but ordinary. It satisfies with tons of flavor, crunch, texture, and nutrition. Packed with fiber, healthy fats, and protein, you can feel good about adding this avocado toast to your breakfast, lunch, or snack rotation. We used microgreens for this recipe, because we love how they “nest” the egg (and they’re packed with vitamins and minerals), but feel free to use what you have on hand—baby spinach, baby arugula, or chopped greens would all work well.

Ingredients

  • 1 slice multigrain bread
  • 3 tablespoons guacamole (store-bought or homemade)
  • ½ cup microgreens, baby spinach, or chopped greens
  • ½ radish, sliced into matchsticks
  • 1 poached or fried egg
  • 1 teaspoon balsamic vinegar
  • 1 teaspoon chopped fresh cilantro
  • Freshly ground black pepper, to taste

Instructions

Toast bread. Spread with guacamole. Toss together microgreens and radish, then place on top of guacamole. Top with egg, drizzle with balsamic vinegar, and sprinkle with cilantro. Add freshly ground black pepper, if desired.

Almond Butter Banana Toast

This almond butter banana toast is naturally sweet and satisfying. We love it for breakfast, but don’t stop there—it’s great as a snack or even dessert. Rich in fiber, protein, healthy fats, potassium, iron, calcium, and more—this toast packs quite a nutrient punch. We topped the toast with chia seeds for crunch, texture, and added nutrition, but feel free to omit if you don’t have them on hand.

Ingredients

  • 1 slice multigrain bread
  • 1 ½ tablespoons unsalted almond butter
  • 1 banana, sliced
  • 1 tablespoon blueberries
  • ½ teaspoon chia seeds (optional)

Instructions

Toast bread. Spread with almond butter. Lay banana slices atop the almond butter. Top with blueberries. Sprinkle with chia seeds, if desired.
