Recipe: Vegan Caprese Skewers

This easy summer appetizer is fuss-free, healthy, and refreshing. And the best part is there’s no cooking required. You simply skewer tomatoes, cucumber, avocado, and basil onto toothpicks and drizzle with a zingy lemon basil vinaigrette. This recipe is a twist on traditional caprese—we're using avocado and cucumber instead of mozzarella. We love serving this appetizer alongside our favorite summer entree, Lemon Basil Turkey Burgers.

Ingredients

  • 8 cherry tomatoes
  • 16 basil leaves
  • 1 cucumber, peeled, and sliced into ½ inch rounds
  • 1 avocado, halved, and then quartered

Instructions

On a toothpick, skewer one cherry tomato, one basil leaf, one slice cucumber, one basil leaf, and one avocado chunk. Place onto a platter. Repeat.

Drizzle skewers with our lemon basil vinaigrette. Serve.

  • If you are preparing these ahead of time, you can squeeze a lime or lemon wedge over the avocado to prevent it from browning.
  • For ease of drizzling, add vinaigrette to a small Ziploc bag. Using a scissors, snip one of the bottom corners off the bag, then drizzle.
