Recipe: Blueberry Orange Creme Mousse

Remember those creamsicles you used to eat as a child on hot summer days? This elegant, tart, sweet and creamy dessert tastes just like that childhood favorite – except it’s made with real ingredients and is better for you! Plus, we’ve amped up the nutrition and flavor by using fresh citrus juices and fresh blueberries. Take a walk down memory lane with this creamsicle copycat!

Ingredients

  • 8 ounces fresh blueberries, reserve a small amount for garnish
  • 14 ounces sweetened condensed coconut milk (non-dairy)
  • 1 ¼ cup frozen fat-free whipped topping
  • 2 lemons, juice of (~ ¼ cup + 2 tablespoons lemon juice)
  • 1 orange, juice and zest of (~1/4 cup of juice), reserve a small amount of zest for garnish

Instructions

  1. Divide blueberries evenly into 10 small dessert cups. 
  2. Mix sweetened condensed coconut milk, whipped topping, lemon juice and orange zest together in a large mixing bowl. Whisk well. 
  3. Whisk in orange juice.  Pour or spoon the mousse equally into the dessert cups, over the blueberries. 
  4. Top each cup with a few reserved blueberries and a sprinkle of reserved orange zest.
  5. Cover with plastic wrap and chill in refrigerator for 3 hours. 
  6. Serve. 

Guide tip: 

  • The addition of citrus juices (orange and lemon) and zest (orange), packs a ton of flavor, as well as a punch of immune-system supporting Vitamin C.

  • This is a great recipe to serve for guests this summer, because you can make it ahead of time, chill it, then serve once dessert time rolls around. 

Recipe notes:

  • On occasion, the sweetened condensed coconut milk has larger bits of cane sugar in the cans, so whisk well upon adding to the other ingredients and break up any larger chunks of sugar with a fork.  
  • Sweetened condensed coconut milk is a dairy free alternative for recipes using sweetened condensed milk. 
  • For a 100% non-dairy dessert, look for plant-based frozen whipped toppings that are dairy free.
